Frequently Asked Questions

How much is a 1/4 animal?
Hanging weight for a quarter is usually 100-150 pounds.  If you choose standard cuts, you will get about half of your meat as steaks and roasts and about half as ground beef.  We charge $3.75 per pound on the hanging weight, and you pay your own processing.  Processing varies by what you have done, but runs around $100 for a quarter animal.  This means you will pay about $500-$600 for your quarter.  This is as close as I can guess before knowing the hanging weight of the animal.

How is the meat packaged?
Sims vacuum seals the meat.  This prevents freezer burning, and the meat stays fresher longer.

If my hanging weight is 150 pounds, how come I don't have 150 pounds of meat?
The butcher charges us by the hanging weight, so that is how we charge you.  Once the meat is dressed–bones removed, organs removed, fat trimmed, etc.–the remaining weight on our animals is about 60% of the hanging weight.  This means you will have around 100 lbs of meat, and the cost of your meat is about $7.50 per pound.  This might seem expensive for ground beef, but remember, you are getting your steak and roast cuts for this price as well.  And when you look at grass-fed, hormone-free beef at the store, it can be as expensive as $10 per pound even for ground beef!

Can I purchase the organs?
If no one else who is splitting the animal with you is interested in the organs, you are welcome to purchase those.  Some things, like the liver, can be split if more than one customer is interested.

How do I order a quarter?
The best way to do this is to give Nate a call or text at (219) 916-4009.  We will put your name on our list and let you know when we think the next animals will be ready to go to the butcher.  We take the animals in and give the butcher your name.  Then you have about 2 weeks to call (while the animal is hanging) to tell the butcher how you'd like your beef cut.  We pick the meat up when it is done, and then we coordinate with you a good pick-up time for you to come to the farm and get your meat.
